An ancient recipe that we have made Sicilian thanks to the use of a great cheese: the Sicilian pecorino. It is a simple recipe but that it needs to perform with attention, because succeeds to the best.
Ingredienti
– 320 g of spaghetti Etna
– 200 g of pecorino Sicilian gratrd
– Pepper q.b.
– 4 table spoons of extra virgin olive Sicilian oil
– Salt q.b.
Preparation
While the spaghetti are cooking, put the pecorino in a container, add some spoons of cooking water and mixing until when a cream is not born of it. Use a frying pan to heat the oil with some pepper, drain the pasta a couple of minutes before her time of cooking, preserving some cooking water, and add the pasta in the frying pan.
Jump her on the fire for a couple of minutes and then, to out fire, add the cream of pecorino amalgamating well the everything. Before serving, another beautiful dusting of pepper.
